Pike Tatar with Apple Parfum de Vie
Ingredients:
- fresh pike
- pine nuts
- black and green olives
- olive oil
- salt, Cayenne pepper or white pepper
- capers
- fresh and tart apples
- lemons
- Apple Parfum de Vie
Preparation:
Dice the unpeeled apples and sprinkle them with lemon juice. Chop and add the capers, pitted olives and pine nuts. Fillet the pike filets, cut them into small pieces too and season each with a splash of lemon juice. Combine all the ingredients with plenty of olive oil. Season everything with salt, pepper and a dash of Apple Parfum de Vie and dress it.
Accompaniment: fresh white bread or stone-baked bread
